Let’s be honest, sometimes figuring out what is going to be for dinner is not an easy task. With the business of work and family, it is often the last thing on our minds. This last year, my family has made it a priority to be more healthy, and let me tell you, it has been a lot easier said than done. There are times when drive thru fast food sounds so much easier than cooking the meal I was planning to make. I am going to share a couple recipes that have been a saving grace for my family during this winter season. They are easy, quick, and delicious, and I highly recommend you give them a try if you are looking for meals to add to your rotation.
White Bean Chili
Is it only me or is the crockpot one of the best inventions? I have grown to absolutely love my crockpot the past couple of months. It is so great to be able to throw together ingredients in the crockpot and be able to go about my busy day. The first recipe I have recently found is a White Bean Chili. This recipe is so simple, and I give it 5 stars. The only change I make to it is I add a chicken breast in it to make it a little bit more hearty, yet still very healthy. Before this recipe, I would have never thought to use greek yogurt instead of sour cream as a topper and now I will use greek yogurt over sour cream for a lot of other recipes. Not only is this recipe easy to make, but it is also easy on the wallet.
Butternut Squash
The second recipe I want to share is a great one to boost your immune system. With it being cold and flu season, this butternut squash soup recipe is great with all the garlic and ginger it has in it. If you have a cold, it will help you beat it quickly. This one is a little bit more time consuming, but it is worth every minute. Sick or not, this is a fantastic recipe for this time of the year.
Sweet Potato Nachos
Lastly, who doesn’t love to go to a game and get greasy, unhealthy, fully loaded nachos? I found a recipe that will blow those nachos out of the water, and guess what, they are way more healthy! This Sweet Potato Nacho recipe is phenomenal. You may think, how can substituting sweet potatoes for tortilla chip be any good? Let me tell you, it is delicious! The sweet and spicy taste of these nachos are just the perfect combination.
